Have you ever wondered about the difference barbecuing in a barbecue pit makes? The barbecue pits is one the earliest slow cooking method for cooking meat. It was originally intended for a whole pork barbeque, but a barbecue pit can be used to slow cook beef or chicken.

The barbecue pit differs from conventional grilling methods in that it slow cooks and smokes the meat to make it tender and tasty. In today�s world, there are many alternatives to the traditional barbeque pit, but a meal prepared in a real barbeque pit is something to be relished.

The main idea of a barbecue pit is to make an oven in the ground. Fill the barbecue pit with dry wood to make a bed of hot coals. Wet wood is used in the barbecue pit to add a smoky flavor while the meat is cooking. The barbecue pit is covered while cooking, so the smoke and heat are concentrated. The meat cooks tender and delicious. The process of cooking in a barbecue pit takes about 8 to 10 hours, so you will want to start in the morning, or even the night before you plan t have your barbecue pit party.

If your plan is to barbecue a whole or halved cow or a pig, it is necessary to dig a barbeque pit wide enough to accommodate the size of the meat to be barbecued. Your basic barbecue pit is three feet square, and that includes the depth. You will need something to cover the barbecue pit as well. A piece of plywood or tin should do the trick.

To begin your barbecue pit experience, fill the hole about � of the way full with dry hickory chunks and light them up. This makes a bed of coals about 1 � feet thick. It takes about two hours for it to get really going, so you will have time to get the ribs, briskets, roasts or whatever you have decided to cook, ready.

Before putting your meat into the barbecue pit, after you are finished preparing it, wrap each piece of meat tightly in brown paper and then wrap in at least two layers of wet newspapers.

When you see a hot bed of coals in your barbecue pit, it is time to take a shovel and level the coals into an even layer for your cooking surface. Now you will add wet hickory, aspen, apple, or another type of smoking wood, and layer it loosely on top of the hot bed of coals in the barbecue pit. This makes a barrier between the coals and creates a smoky flavor for the barbecue while it cooks.

Place the lid on top and cover it with the dirt you dug to make the barbecue pit. Ensure no smoke is escaping from the barbecue pit, sit back, and relax while you are waiting for this delicious feast to cook. Make sure that you leave the barbecue sealed for at least 6 to 8 hours. Because the barbecue is self-contained, you don�t have to worry about your meat drying out.

When you are ready to open the barbecue pit and eat, you will want to get rid of the dirt that you sealed the pit with so you can remove the lid. Work quickly to remove the meat from the barbecue pit. When you are ready to unwrap the meat, the paper wrapper should still be wet and the meat inside will be warm and juicy. A barbecue pit is worth trying, after your first taste you will be hooked for life.
