If you offer a bran muffin or a cup of lentil soup to a kid, you're likely to get groans and sneers. Today's children simply do not consume enough fiber-rich foods. It's just as important to your child's health as it is to yours to get enough fiber.

Foods that are high in fiber are smart and caring choices for your kids because they're filling and discourage overeating - and fiber itself has no calories. The rate of obesity in children living in the United States is glaring evidence that something must dramatically be altered in our approach to healthy eating.

Consider changes in meals and snacks that will add high fiber to the diet over a span of time. Offer a wide variety of high fiber food sources. If you change slowly to more high fiber fruits and veggies, your kids' fiber adaptation will be so much smoother (so will their bowel movements). Make sure that you introduce fiber gradually to their daily diet with lots of drinking water to move things easily along.

Fiber helps delay the absorption of sugars into the bloodstream, regulating blood sugar levels which help kids learn and behave better. It also reduces the risk for some cancers later in life.

An easy way to calculate how much fiber your kid should have every day is by adding 5 to their age. For example, if you have a 6-year-old, he or she should get about 11 grams of daily fiber. Adults and those older than 15 need 25 to 30 grams of fiber per day.

Kids tend to be most receptive to the fiber found in fruits, vegetables and presweetened breakfast cereals. Apricots, figs and prunes make wonderful high fiber snacks. They love to crack open nuts like peanuts and pistachios. Choose pears, apples and berries; peas, nuts and beans; and cereals and pancakes made with whole grain.

If bread is brown in color, it doesn't mean that it is whole grain. Check the ingredient list to see if it reads "whole grain" or "whole" as in whole wheat. Look for at least 4 grams of fiber per serving.

Get your kids to help make decisions about better eating, you might find their attitudes more open to a healthier diet plan.

Don't just set the table at suppertime. Set a good example with a lifetime of healthful eating habits.

Avoid Fast Food - Here's How

When you're on the way home from work or school and you know you don't have anything planned for dinner, the easiest thing to do is to stop at a fast food drive through and pick up dinner. You feel guilty because you're spending money and not eating well, but what other choice do you have? I'm going to help you through some simple steps that will help you avoid that stop at the fast food restaurant.

When you have a home cooked meal prepared or at least have the ingredients ready for a home cooked meal you will be much less likely to choose a less than desirable alternative.

1. Make a list of 12-15 meals you can fix when you make out your grocery list. Then buy the items you need to make those meals.

2. Educate yourself either through books, radio or television on the ingredients in fast food. The ingredient contained in most fast food that you want to avoid is MSG (monosodium glutamate). It is a flavor enhancer, but it's also an appetite and nervous system stimulant. That's why the food tastes so good, but it's also why you're hungry an hour later. Most people have a hard enough time keeping their weight down. They don't need to be fed and appetite stimulant to make the problem even worse.

3. Use the time you're already in the kitchen to make some extra of the meal you're cooking. Then put the extra meals in the freezer to have on hand when you want to be able to just put a prepared meal in the oven.

4. If you have children, have them watch the food shows that are on TV with you and inspire them to help you choose and prepare meals.

Sometimes it takes longer to wait in line at a fast food restaurant than it takes to be at home with dinner baking in the oven. Think about how you can take just a few minutes every couple of weeks to plan some good healthy meals that will be better for everyone. Who knows you might even feel better and lose a few pounds.

Who Makes the Best Pizza in the World?

Pizza is a universal food. Most of us grew up with it. All of us have an opinion about it.

If you are from New York, it's New York pizza. If you are from Chicago, it's Chicago Deep Dish. The West Coast fans have their own traditional Italian pizza as well as New Wave.

Of course if you are from New Haven, Connecticut, you spend hours debating who makes the best apizza: is it Sally's or Pepe's? Then there are those who favor Modern Apizza. New Haven fans are fanatics.

Woven across the U.S. are small pockets of regional favorites. For example, on Long Island, New York, it's a type called Grandmother's. If you are from a certain area in Pennsylvania, you favor Old Forge.

There are types of pizza for every different taste: there is thin crust Neapolitan, and there is thick crust Scilian. Chicago deep dish, is a unlike an other. California pizza can be thin with unusual ingredients for unique tastes.

People don't argue about steakhouses or hamburgers or Chinese food, but this food hits a chord. It's a magical little disk that makes things happen. It doesn't matter if you're in Pennsylvania or Wisconsin, your own region makes the best pizza in the world. You tend to favor what you grew up with.

There are also, the master pizzaiolo, who defy any region and make the best possible putting their heart and soul into each one produced.

Here is a short list of pizzaiolo, who do it their way. Not for fame or glory but because they are dedicated to the craft of creating incredible pizza.

Pizzaiolo Chris Bianco, (Pizzeria Bianco, Phoenix, Arizona), is regarded by some, the finast pizzaiolo in the U.S. Ed LaDou, is another highly acclaimed pizza master. He created Wolfgang Pucks as well as California Pizza Kitchen's menu. He now makes his own at Caiote Pizza Cafe. Tony Gemignani (8 time World Champion and co-owner of Pyzano's) and Brian Spangler (Apizza Scholls, Portland, Oregon), each carry on the tradition of passion and strive for perfection. Gary Bimonte, grandson of Frank Pepe continues his grandfather's legacy at Pepe's in New Haven, Connecticut.

Another Legend is Peter Reinhart, author, baker and pizzaiolo. Peter told me once, there are only two types of pizza: good pizza and great pizza.

Peter went on a quest to find the best in the United States. His book, American Pie, chronicles his pizza adventures.
